La Deriva Cucina Italiana

In tonight’s episode we are dining at the new La Deriva Cucina Italiana. This is a seaside restaurant right on the water and one of the restaurant choices at the new Solaz Los Cabo’s resort in the corridor. It is a short drive from Cabo along the beautiful highway 1 to Solaz. We arrived and enjoyed the valet service before sunset. We took advantage of their seaside bar and ordered a couple of margaritas and watched the horses head down the beach. The new Solaz Los Cabos is a contemporary wonder and a welcome addition to the luxury resort category.

The menu of Chef Patron Emanuele Olivero is inspired from a philosophy of tradition. The cuisine the chef serves has a long history passed down from generation to generation, which is why his objective is to preserve the authentic flavor of Italy with its northern influence. Each plate expresses tradition and innovation, at the same time offering the highest quality local of Baja Californian products.

Before taking our table we toured the indoor seating options and said hello to the kitchen. They were stoking the mesquite grill and preparing for a busy night. We opted for the patio table and looked over the menu. First up was the traditional mussels with a Gorgonzola sauce, the verdict excellent.

Next we were served a salt crusted whole cabrillo with organic grilled vegetables, a fresh side salad and a side of truffles and mushroom pasta. The chef paid us a visit and made sure we were satisfied. A nice touch as the evening was winding down. After a wonderful evening we decided to come back again soon and try their nice selection of dulces and aperitifs.

La Deriva is a romantic choice for those craving authentic northern Italian cuisine.

The Spicy Bloody Mary

The well loved Bloody Mary has a rich history and has been used by every true party lover as the perfect hangover cure for decades. Most North Americans partake this lovely mix in the morning or at brunch or after they eventually roll out of bed.

Like the margarita the Bloody Mary has a conflicting history and many alleged inventors.

The name is typically associated with the murderous Queen Mary due to her attempts to re-establish the ultra serious Catholic religion. Others say it was named after Mary the waitress at the ‘Bucket of Blood’ in Chicago in 1920. Still others lay claim it was named after America’s sweetheart Mary Pickford a Hollywood actress during the silent era.

The most recited origin comes from Harry’s New York Bar in Paris in 1921 that was a popular hangout during the impressionist period. The original recipe was simply tomato juice and vodka invented by Fernand Petiot. He later moved to New York City tending bar at the St Regis where he added lemon juice, salt rim and Tabasco sauce to spice it up.

Another claim lay with Club 21 in 1930 in New York City by a bartender named Henry Zbikiewicz. Who spiced up the basic tomato juice vodka with salt, lemon juice, Worcestershire, Tabasco and horseradish to give it a kick.
Whether you call it a bloody, a Cesar, red snapper, ruddy Mary or the Mexican version the Michelada Roja. Just know the Virgin Mary won’t fix your pounding headache since you need alcohol to help shake the snake that bit you and relieve the hangover with hair of the dog.

In any event we pay homage to this red deviled elixir, this supplier of dry tongue relief, this savior of black out behavior and the perfect pairing to breakfast early or late. Let us now show you how to make our version of the ever popular Spicy Bloody Mary.

Step one assemble all your ingredients and set aside. Mix in a metal shaker your spices first- three shakes celery salt, two dashes cayenne pepper, three squirts of Tabasco, a layer of Worcestershire sauce, 1/2 teaspoon of good sharp horseradish then teaspoon lime and teaspoon lemon.

Next Step add your Tomato juice and Vodka or Tequila Blanco. Today we are using premium Tito’s vodka and home made tomato juice three parts vodka to six parts juice. Add your ice and start shaking. Pour into pre-chilled highball glasses with half rimmed salt and cayenne mix. Then garnish with a celery stick. Or go crazy and garnish it with sliders, seafood, the whole garden or even chicken wings! Drink and enjoy.

Now your fuzzy memory of last nights Margaritas melt away and is replaced with the comforting warmth of a well prepared Spicy Bloody Mary

La Bohemia’s Motorcyle Tours

In today’s episode of Baja adventures we are going north to Todos Santos for an off-road motorcycle tour with Andy Wheelwrite of La Bohemia.

La Bohemia hotel pequeno offers a boutique hotel experience that is both relaxing and exhilarating. Among a wide variety of experiences and custom tours is the guided off motorcycle tours of the greater Todos Santos region.
Bring your own motorcycle or rent his GS 650 f BMW enduro. We geared up and hit the highway to reach the trailhead just outside of Cerritos.

We are on a ride up to la Soledad and the mountain road to Naranja.
As we gain elevation the road gets tighter and more technical. We are both excited to ride after the recent June storm. The roads are less dusty, the creeks are flowing and the roads are more rutted out. In other words it’s like a powder day for desert dirt biking.

We reach the summit after a fun ascent and take a nice break. The views from up here are expansive. You can see how the western slope of the Sierra de la Lagunas roll from steep to hilly and gradually reach the Pacific.
Time to head downhill and find some new routes through the hills and various ranches. Besides the adrenaline and thrill of the ride, exploring these mountains and discovering the expansive amount of undeveloped land is one of the many reasons we both moved to the Baja. Sure there are major developments throughout Los Cabos, but this area feels like the real Baja that we know and love. After a nice ride it’s always nice to kick off your riding boots and cool off in the shade. So if you are looking for a nice adventure be sure to contact me at www.cabosfinest.com.

The Perfect Margarita

The world famous Margarita has an illustrious and disputed history dating back to the late 1930’s during the dreaded Prohibition. Cocktail historians claim is was merely the cocktail called ‘daisy’ that was made with orange liqueur, lime juice and Brandy. When brandy became scarce certain hero’s were known to drop below the border in search of a perfect stiff Daisy that had tequila replacing the hard to acquire brandy.

Also claiming the invention was Carlos “Danny” Herrera at his Tijuana restaurant Rancho La Gloria in 1938 where he created for customer and former Ziegfeld dancer Marjorie King, who was allergic to many spirits, but not to tequila

Another legend claims that the original Margarita was made in 1941 at Cantina Hussong in Ensenada by bartender Don Carlos Orozco. While he devised this most excellent concoction he had the visiting Ambassador of Germany’s daughter Margarita Henkel give it sip. The overwhelming conclusion. ‘ most excellent!’

Others say the inventor was Dallas socialite Margarita Sames, when she concocted the drink for her guests at her Acapulco vacation home in 1948. However, Jose Cuervo was already running ad campaigns for the margarita three years earlier with the slogan, “Margarita: It’s more than a girl’s name.

In any event we are delighted to know and love this most excellent elixir, this sayer of desert truths and the gods gift from the sacred blue agave. Let us now watch as we make the perfect stiff Margarita.

First step take Jose Cuervo mix and violently shake it for 5 minutes, then toss it in the trash along with that bottle of Cuervo Gold. We are striving for the classic style Margarita not a mango marg nor a frozen strawberry variety.

Step two- Use a decent Reposado Tequila that is 100% blue agave. Today we are using Don Julio Reposado and we make them fuerte or strong in order to enjoy the delicious taste of this fine tequila. Typically two ounces to one Cointreau mixed together in a metal shaker. Fill the shaker with high quality ice then the tequila and Cointreau.

Step Three-Squeeze fresh lime approximately one ounce and add to the mix. Note-Never use lime juice from a bottle, ever, nunca, nada like never! And please do not pretend that a pre-made mix is a Margarita.

Step Four- Take pre-chilled glasses of choice out of the freezer use the lime to wet half the glass and salt it lightly on the OUTSIDE of the rim. You don’t want too much salt effecting the blend. A quality sea salt is preferred. Add ice to the glasses.

Step Five- shake the mix in the shaker for 15 seconds of until bottom of shaker ices up. Strain mix into ice filled glasses and add your slice of lime.

Final Step- Enjoy it with a friend or lover while watching the sun set over the ocean. But remember that a well made margarita can be enjoyed any place and at any time of day or night with others or drink it alone since there will be no one there to observe your improved behavior

El Encanto de la Laguna

Located just 15 miles from San Jose and adjacent to Puerto Los Cabos is the stunning El Encanto de la Laguna. As you enter the gates your stress melts away and your anxiety is replaced with seaside bliss. Nestled along the Sea of Cortez this gated development features a beautiful collection of beachfront villas and beach view residences and large comfortable condos.

We stayed in condo Olas 201 which is a big three bedroom residence with amazing views. After getting settled in we headed down to the huge infinity pool with our cooler and towels. Oakley enjoying the shaded bar.

This seaside development is in its final 3rd phase and has limited developer lots and some resales. We toured penthouse del sol 301. This is a similar 3 bedroom to the one we are enjoying but on the top floor of the Del Sol building that has only 6 units total. Tastefully decorated with a modern casual style, this open floor unit has three spacious bedrooms and ample outdoor living space. As you can see the views are great.

Now it is time to explore the beach. This wide sandy beach stretches for miles. Everyone in the family can enjoy the wide range of activities and adventure that the east cap delivers. You can keep your boat at the nearby marina or charter one.

Fresh on the market is villa #6. This is your chance to own a beautiful four bedroom oceanfront villa for under $3 million. Tres Sirenas Restaurant Cabo San Lucas

Tres Sirenas Cocina Del Mar
Hi KT Morgan here with CabosFinest on tonight’s episode we are reviewing the new Tres Sirenas in Cabo San Lucas. Located directly across from Edith’s near Medano Beach is the newest addition to the Edith’s restaurant group. The well trained staff welcomes us to this beautiful open air restaurant.

Wow this place is huge and has multiple dining areas and a roof top deck. Smart move since Edith’s is often overbooked. We started the evening with traditional Don Julio margs and mango margs. The waiter brought over some aged steaks and fresh seafood and described the various preparations. After placing our orders the chef started our meal with a tasty complimentary appetizer then we enjoyed the guacamole and fresh salsa. Next up was some excellent fish ball soup and shrimp chowder in a bread bowl. Yummy!

After a nice song and a private tour of the kitchen, we were ready for the main courses. We decided to share the blackened Tuna Steak and the delicious Coconut Shrimp served in a coconut with mashed potatoes. The portions were generous and the service excellent.

We paired the meal with a savignon Blanc from Valle de Guadalupe. Oakley especially enjoyed the Tuna. After such a great meal we were serenaded by the mariachis then finished it up with Mexican coffee. An appropriate ending to an excellent evening. El Triunfo Baja California

El Triunfo is a small mining town 45 minutes from Todos Santos. In 1862, silver and gold were discovered in the southern B.C.S. mountains, leading miners from Mexico and the United States to set up camp. Once the largest city in B.C.S, it was home to more than 10,000 miners.

Pianos and other instruments were brought to El Triunfo from all over the world and a piano museum still exists. Another remnant of the past is the 35-meter-high smokestack designed by Gustav Eiffel. The mines shut down in 1926 and most people left. The 2010 census reported a population of 321 inhabitants.

Recently folks with the heart to restore and the muscle and determination to do something about it restored and opened Caffe Triunfo. This an excellent option for a meal while you explore this cool town. They and others are in the process of restoring several of the other old buildings and converting them to restaurants, museums, boutiques, etc. in an effort to attract tourism.

The friendly locals are all smiles and are delighted to see the improvements in the town. This beautiful mountain town is at an elevation of 1,585 and feels like it is lost in time. You still see Caballero’s riding horses.

So after we explored the sights and ate a great meal we were ready for our ride back to Todos Santos. On your next trip to Baja be sure to add a day trip to El Triunfo, you will love it.
